TACOS / TORTILLA DELIGHT.By Dr Franca 29th April 2018.


Recipe:

Ingredients:


Mince beef

Onions

Garlic

Oil

Cheese

Fresh lettuce

Tomatoes

Cucumbers

Tacos or tortillas.


Fry the mince with onions, garlic, salt and pepper to taste. Drain out the fatty oil.  


Bring out the tacos or tortillas, fill it with lettuce, sliced cucumber and tomatoes and then add the fried mince top it up with cheese and salad dressing of choice. Enjoy

ACID AND ALKALINE FORMING FOODS.  Do you know if you are in balance? How do we know? We need 70% acid forming foods and 70% alkaline forming foods.

Nutritionists estimate that 70% of us eat such unbalanced diet such that our bodies are in a highly unhealthy acidic state.  This unbalanced health situations can be improved by avoiding acid forming foods such as coffee, dairy, alcohol, bread and red meat.  A good balanced diet would include drinking two litres of water and eating at least five portions of fruits and vegetables daily.  ARE YOU GETTING THE RIGHT BALANCE IN YOUR FOOD?

The acid alkaline balance affect every system in the body. High acidity level put too much stress in the body, sapping energy and forcing the liver to overwork. Foods such as red meat and processed meals are harder to digest. Consequently more acidic bye-products are produced. The kidneys have to work hard to flush out the acidity and toxins. They (body system) use calcium and magnesium from the bones to neutralise these by-products which put people at risk of bone thinning disease osteoporosis.

Long term acidity has been linked to arthritis because it causes inflammation. When acidity is pushed out through the skin it can trigger problems such as spots, bloating, digestive disorders, head ache, tiredness, aches and dark circles under the eyes. Cutting down on acid-forming food and drink could do wonders for your general wellbeing.

Most people don’t know what a balanced diet means. A near perfect balance is 70% alkaline and 30% acid-forming foods. The relationship between acid and alkaline is measured on a pH (potential of hydrogen) scale ranging from one to fourteen. Seven is neutral, below seven is acidic and anything above seven is alkaline. Human bodies function best in a slightly alkaline environment of between seven and eight.

Maples Bacon Quiche and  Salad.


Recipe: For a standard 9 inch Quiche.


Ingredients


For Salad:

  • A bag of rocket salad or rucola, or arugula leaves or any lettuce leeaves 
  • 10 cherry tomatoes or any tomatoes of choice
  • 2 tablespoons of grapeseed or olive oi
  • ​croutons
  • grated parmesan cheese (optional)
  • ​Peanuts optional
  • salt to taste


Directions:


mix the leaves in a bowl, add the cherry tomatoes, salt, oil, then add the grated cheese.


Maple Bacon Quiche:


  • flour
  • bacon (10 strips)
  • 1 onion, thinly sliced
  • 1 table spoon of water
  • 1 cup of cream
  • salt and pepper to taste
  • ​3 large eggs
  • 1 table spoon of olive oil
  • 3 table spoons of pure maple syrup
  • pate brisee for maple bacon quiche
  • thyme and parsley.

Directions:

Fill the pan with pate brisee and prick the bottom several times with fork.  freeze for 30 minutes.  Preheat oven to 375 degrees, line dough to fit and bake for 20 minutes, let it cool.  Prepare the bacon (either fry or grill), and shred bacon. Add chopped onions and maple syrup and water to the bacon droppings. Remove from heat and let it cool slightly. Whisk together the eggs, cream, thyme, parsley, salt, pepper. Whisk onion mixture, pour into cooled tart shell, scatter the bacon on top. Then bake the quiche until the edges are golden brown. Cool and serve.

Garlic bread with beef lasagna:


Ingredients: Lasagna sheets, lasagna sauce, mince beef, onions, tomato sauce, Parmesan  cheese, Mozzarella  cheese, salt, pepper, spices, french sticks, garlic, olive oil, parsley, 



Directions:

Preheat oven to 350 degrees F (175 degrees C).
In a large pan, cook and stir minced beef until brown then add the diced onions and stir until tender. Add the spices and pepper to taste. Pour the tomatoes sauce in the mix and and boiling water to make a good sized sauce. 

Spread a thin layer of the meat sauce in the bottom of a 13x9 oven dish, and lay the laagna  sheets, pour some of the tomatoes sauce and pour some lasagna white sauce and lay some more lasagna sheets. continue this process until the dish is full. Spread the mozzarella cheese and Parmesan cheese on top.
Bake in preheated oven for 45 minutes.


Slice the French stick diagonally, and crush garlic and spread on it, thinly spread some olive oil on top and garnish with parsley. Bake in the oven for 10 minutes. 

​Serve with the lasagna.

Mixed vegetables potato salad with dried tomatoes and fish cake.By Dr Franca 27th May 2018


  • Ingredients:

Baby potato, red cabbage, white cabbage, salad dressing, carrots, dried tomatoes, fish fillet (cod or haddock) flour, spices, onions, oil, eggs, spices and seasoning.


  • Directions: Wash the potatoes and cut into chunks without peeling. boil until tender, shred the red and white cabbage and carrots.

Boil the fish and shred in a plate, add chopped onions and salt, pepper and spices and seasonings, roll the fish into flat chunks, cover with flour and egg white, then shallow fry in the frying pan with small oil until golden yellow. 


Arrange the shredded vegetables with the potatoes mixed with the salad dressing in a plate, arranged the sun dried tomatoes on it and add the fish cake on top.

Ingredients:

​Eggs, sausages, bacon, mushroom, tomatoes, chillies, mixed peppers, onions, olive oil.


Directions:

Grill the sausages, and fry the bacon with a dash of oil. Fry the eggs sunny side up. Chop the mushrooms, tomatoes, chillies, onions, and mixed peppers. Fry the onions in a little oil and salt, add the chopped mushrooms, fry for some time then add the tomatoes, chillies, mixed peppers and season to taste. Arrange in a plate and serve.

​​GARLIC  THE WONDER DRUG By Dr. Franca 27th November 2016

A large number of studies have implicated garlic and onions in the reduction of diseases in humans, especially cancers and gastrointestinal tract.  Garlic consumption had a direct association with decreases in stomach cancer in a large China study.  This held true for both raw and cooked garlic.

Olive oil fried rice with roast chicken and iceberg lettuce salad: By Dr Franca 20th May 2018.


Ingredients:

  • Rice (Basmati or whole grain rice), chicken drumsticks or any other part of chicken, eggs, prawn, bacon, carrots, peas, sweet corn, green beans, onions, olive oil, spices (curry powder, turmeric, thyme, cumin, cinnamon, chicken season and stocks, iceberg lettuce, cucumber, tomatoes.

Directions:


  • ​Per boil rice until tender, drain with colander. Boil the chicken drumsticks or any other part of chicken,  the spices. Bring out chicken from the stock. Cook the per boiled rice with the chicken stock until fully tender. Marinade the boiled chicken and put in the oven for 20 minutes until golden tender. Per boil the prawn, chopped carrots, peas, green beans and sweet corn and drain.
  • Add small olive oil in the pan and add salt when its heated, add the egg and fry to one side of pan, then add the chopped bacon, then add the prawn and boiled carrots, peas, green beans and sweet corn, add turmeric and curry powder and other spices. Fry for 5 minutes, then add the rice and turn, season to taste.
  • Cut the slash the iceberg lettuce, cucumber and tomatoes for salad.Dish out in the plate and serve.
